S’mores Faux Ice Cream Sandwiches

As fun to eat as the real thing, but with less mess

ingredients


1cup (250 mL) marshmallow fluff
1/2cup (125 mL) crushed graham crackers
1/2cup (125 mL) mini chocolate chips
24round chocolate wafer cookies

directions

1.In a bowl, stir together marshmallow fluff, crushed cookies and chocolate chips until combined. Spoon about 1 tbsp (15 mL) on each of 12 of the cookies. Top with remaining cookies and squish gently. Wrap and store on the counter or fridge for up to 3 days.
2.Makes 12 sandwiches.
3.In 1 sandwich: 139 calories, 2 g protein, 5 g fat, 21 g carbs
4.Variation: Chocolate chip cookie sandwiches: Use 28 small, chewy chocolate chip cookies instead of chocolate wafers.
