Baked Fruit “Pancakes”

Cooking Time: 60 minutes or less
Makes: 8 servings

ingredients


1tsp (5 mL) unsalted butter
2/3cup (150 mL) plus 1 tbsp (15 mL) granulated sugar
6large eggs
3/4cup (175 mL) all-purpose flour
1tsp (5 mL) vanilla extract
1/4tsp (1 mL) salt
2cups (500 mL) milk
1cup (250 mL) 35% whipping cream
7peeled pears or 10 fresh plums, sliced thickly
a few drops fresh lemon juice

directions

1.Preheat oven to 375°F (190°C). Prepare 2 round baking dishes (8–10 in/20–25 cm diameter) by rubbing bottom and sides with butter and sprinkling with 1 tbsp (15 mL) sugar. (If your baking dishes are a bit larger or smaller, your “pancakes” will be thinner or thicker. No worries.) Set aside.
2.In a large bowl, combine remaining sugar with eggs, and whisk until mixed thoroughly. Whisk in flour a little at a time to prevent lumps. Add salt, vanilla, milk and cream; mix until just combined.
3.Place fruit in a single layer in the bottoms of baking dishes and sprinkle with lemon juice. Whisk batter once more. Carefully pour in batter, dividing between the 2 dishes. The fruit will float up; that’s OK. Bake on the middle oven rack for 40–50 minutes, until “pancakes” are just set and slightly brown around the edges. Serve by the spoonful, or in wedges like a pizza.
