Greek-Style Sandwiches

Makes: about 4 servings

ingredients


Sandwich
2cups (500 mL) diced cooked chicken
¼cup (50 mL) diced cucumbers
¼cup (50 mL) green pepper
¼cup (50 mL) red onion
¼cup (50 mL) pitted and quartered black olives
¼cup (50 mL) crumbled feta cheese
salt and pepper to taste
your choice of bread

Dressing
2tbsp (30 mL) mayonnaise
2tsp (10 mL) lemon juice
¼tsp (1 mL) crumbled dried oregano

directions

1.In a bowl, mix together the chicken and ingredients. In a separate small bowl, mix together the dressing ingredients. Add dressing to the chicken mixture and combine well. Taste, then season with salt and pepper if desired. Pile onto bread or stuff into pita or roll into tortillas.
