Zingy Carrot and Raisin Salad

Makes: 3 or 4 servings

ingredients


6 medium carrots, peeled or scrubbed and shredded
½cup (125 mL) raisins
¼cup (50 mL) lemon juice
¼cup (50 mL) olive or vegetable oil
1tsp (5 mL) Dijon mustard (optional)
1tsp (5 mL) sugar
½tsp (2 mL) salt

directions

1.Toss together the carrots and raisins in a bowl. In another bowl, whisk together the lemon juice, oil, mustard, sugar and salt. Pour over carrot mixture and toss to combine.
