Apple Brownies with Caramel Icing

Even after sampling umpteen appetizers and main dishes, our judges still had room for this delicious dessert. The kids were totally nuts about the icing.

ingredients


Brownie
2/3cup (175 mL) butter or margarine
2cups (500 mL) brown sugar, lightly packed
2eggs
1tsp (5 mL) vanilla
2cups (500 mL) flour
½cup (125 mL) chopped nuts (optional)
2tsp (10 mL) baking powder
½tsp (1 mL) salt
1cup (250 mL) chopped apples

Icing
½cup (125 mL) unsalted butter
1cup (250 mL) brown sugar
½cup (50 mL) milk
2cups (500 mL) icing sugar

directions

1.First make the brownies. In a large bowl, cream the butter and sugar until smooth. Add the eggs and vanilla and mix well. Measure in the flour, baking powder, salt and nuts and apples, and stir until ingredients are thoroughly combined.
2.Spread batter in a greased 9 by 13-in. (22 by 33 cm) baking pan and bake at 350°F (180°C) for 30 to 35 minutes. Let cool completely before icing.
3.To make the icing, melt the butter in a saucepan, then add the brown sugar and milk and bring the mixture to a boil. Remove from heat, let cool and stir in the icing sugar. Spread onto cooled brownies.
