Totable granola parfait

Ingredients

  • 1/2 cup plain yogurt, preferably 2%
  • 1 tsp brown sugar (optional)
  • 3/4 cup frozen fruit of your choice
  • 1/2 cup store-bought or homemade granola
No need to spend money on those store-bought (and often less healthy) yogurt parfaits. This homemade version is easy to make, and sure to please kids and parents alike.

Directions

  1. Spoon yogurt into a 2-cup glass jar or plastic container. Sprinkle brown sugar overtop. Gently layer with fruit. Sprinkle with granola and seal with a lid. Granola parfait will keep well, chilled, for up to 3 hours.
  • Easy Microwave Granola

    Place 1 cup quick oats in a bowl. Drizzle 1 tbsp vegetable oil, then ΒΌ cup maple syrup, and stir to mix evenly. Microwave, stirring occasionally, until starting to brown, about 3 min. Stir in dried cranberries or blueberries and pepitas (shelled pumpkin seeds). Spread on a baking sheet to let cool. Granola will keep well in an airtight container for up to a week.
