Fruit Pizza

Lori Moore of Kelowna, BC sent us this showstopper. James's comment on his score sheet was: "It's grate." We totally agree. It's the perfect dessert to serve after a big holiday meal.

Ingredients

  • ½ cup (125 mL) butter, softened
  • 1 cup (250 mL) flour
  • ¼ cup (50 mL) icing sugar
  • 8 oz (250 g) cream cheese, softened
  • ½ cup (125 mL) icing sugar
  • 1 tsp (5 mL) granulated sugar
  • assorted fresh or canned fruit (sliced kiwis, strawberries, pineapple chunks, peaches, bananas, mandarin orange segments)
  • 3 tbsp (45 mL) cornstarch
  • ½ cup (125 mL) sugar
  • ½ cup (125 mL) orange juice
  • 1 tsp (5 mL) lemon juice
  • 1 cup (250 mL) pineapple juice

Directions

  1. First, make the crust. Combine the softened butter, the flour and ¼ cup (50 mL) of icing sugar in a bowl, mixing the ingredients until they're crumbly. Press evenly onto a 12 in. (30 cm) pizza pan. This will not seem like quite enough dough, but it is. Just try to cover the surface of the pan completely with the dough. It will be thin, but that's OK. Bake at 325°F (160°C) for 15 to 20 minutes, until very lightly browned on the edges. Let cool completely.
  2. Beat together the cream cheese, the ½ cup (125 mL) of icing sugar and 1 tsp. (5 mL) of sugar until smooth. Spread evenly over the cooled crust.
  3. Now arrange the fruit to cover the entire surface of the pizza. You may want to leave this job to your child who, no doubt, will come up with a very, er, creative design. But if you have your heart set on a tastefully elegant result, you may have to supervise.
  4. Finally, combine the glaze ingredients - the cornstarch, sugar, orange juice, lemon juice and pineapple juice - in a medium saucepan and bring to a boil, stirring constantly, over medium heat. The glaze will thicken and become glossy. Remove from heat and spoon evenly over the fruit layer. Chill until the glaze is set - at least 2 hours. Fabulous, isn't it?
